It is typically formed via the allomerization (oxidation) of chlorophyll or pheophytin during plant senescence, fruit ripening, or processing. Rather than acting as a functional photosynthetic pigment, it serves as a biomarker for monitoring the oxidative stress and degradation pathways of chlorophyll in natural or food systems.
